Charles Phan, a renowned San Francisco chef celebrated for bringing Vietnamese cuisine to the forefront of fine dining with his restaurant, Slanted Door, has passed away. The restaurant announced his unexpected death due to cardiac arrest in an Instagram post, expressing their sorrow and the significant impact of this loss. He was 62 years old.
The Slanted Door team shared that Phan was not only a remarkable chef but also a generous and kind individual. His contributions to the culinary world extended beyond his kitchen, and he played a crucial role in promoting Vietnamese food to a wider audience. The restaurant, now a landmark in the Bay Area, also had two other locations in Napa and San Ramon, as well as one in France. Though the original spot in San Francisco’s Ferry Building closed in 2020 amid the pandemic, there were plans for its return to the Mission neighborhood this spring, though uncertainty now looms after Phan’s passing.
Fellow chefs and culinary figures have taken to social media to pay tribute to Phan, emphasizing his willingness to mentor others in the industry. Carolyn Jung, a dedicated food and wine writer from the Bay Area, pointed out that many chefs feel indebted to him for paving the way for Asian and minority chefs. He demonstrated that despite a lack of immediate recognition for their cuisines, passion and dedication could ultimately lead to success.
Hunter Lewis, the editor-in-chief of Food & Wine magazine, fondly recalled a memorable meal he enjoyed at Slanted Door back in 2007, noting that it highlighted Phan’s influence on the culinary landscape. The Slanted Door became a defining establishment in San Francisco and one of the busiest restaurants along the West Coast, showcasing Vietnamese flavors that were once uncommon in American dining.
Phan’s journey began in Vietnam, where he was born in 1962. His family immigrated to the United States when he was 13, and he learned the art of cooking from his mother and aunt. Initially discouraged from opening a restaurant in San Francisco due to the abundance of Vietnamese eateries, he found success in the Mission neighborhood, with Slanted Door opening its doors in 1995. The restaurant quickly gained a reputation for its innovative take on Vietnamese cuisine, utilizing high-quality ingredients and creating a welcoming atmosphere.
He was bold in his approach, blending traditional flavors with modern touches, and continually adapted by introducing new concepts like cocktail bars and meal kits. Phan received numerous accolades, including multiple James Beard awards, and was known for his straightforward approach to culinary standards.
In light of Phan’s passing, the restaurant encourages everyone to honor his memory by sharing meals with each other in the spirit of community and togetherness. While the team has not announced any specific arrangements, they have requested privacy during this difficult time.
