In recent news from New York, researchers have made strides in perfecting the art of boiling an egg, presenting a method that claims to create the ideal balance between a velvety yolk and a perfectly set white. This comes at a time when egg prices are soaring in the United States, driven by challenges such as a bird flu outbreak.
The journey to a perfect boiled egg isn’t as simple as it sounds. The yolk cooks at a lower temperature compared to the egg white, making it tricky to achieve that ideal consistency. If cooked too hard, the yolk can become chalky, while a slower cooking process might leave the whites somewhat undercooked and jelly-like.
To tackle this culinary puzzle, researchers experimented with hundreds of eggs using various methods that involved mathematical equations to understand how heat flows into an egg and how its contents transition from liquid to solid. Their innovative technique, called periodic cooking, involves alternating between boiling and lukewarm water to cook the eggs over a precise 32-minute time period. This process allows the egg whites to heat and cool gradually, resulting in a fully set white, while the yolk remains at a constant temperature, achieving a creamy texture.
Gregory Weiss, a chemist from the University of California, suggested that anyone could try this method at home with a few eggs. According to study author Emilia Di Lorenzo from the University of Naples, the yolk’s texture becomes nearly spreadable, making it versatile in culinary applications.
To ensure the success of their method, the researchers conducted taste tests comparing their eggs to traditional hard-boiled ones, showing a preference for the new technique based on texture. Though this method may require more time and effort, food scientist Joanne Slavin from the University of Minnesota believes the superior quality could be worth it.
While it may take a bit longer in the kitchen, the potential for achieving a better outcome supports the notion that sometimes, patience in cooking can lead to great rewards.
