A Flavorful Tomato Salad Inspired by Tradition
This vibrant tomato salad draws influence from Mexican salsa macha, a rich and spicy condiment made with a blend of dried chilies, garlic, nuts, and seeds. Instead of pureeing the ingredients, this recipe incorporates them directly into the salad, creating a delightful mix of textures and flavors.
To make your salad stand out, consider using heirloom tomatoes in various colors and combine different types for added interest. Salting the tomatoes beforehand enhances their natural flavor, making them more succulent. For smaller tomatoes, like cherry or grape, cut them in half so the salt can penetrate better.
When toasting peanuts and sesame seeds, choose a light oil, like grapeseed, as it can withstand higher temperatures without losing its flavor. Kosher salt works best for salting the tomatoes due to its larger crystals, which distribute more evenly.
Tomato Salad with Peanuts, Cilantro, and Chipotle-Sesame Dressing

Ingredients:
- 2 tablespoons neutral oil
- ¼ cup roasted peanuts
- 2 tablespoons sesame seeds or 1 sliced garlic clove (or both)
- 1 chipotle chili in adobo, minced, plus 1 teaspoon adobo sauce
- 3 tablespoons cider vinegar
- Kosher salt and ground black pepper
- 2 pounds ripe tomatoes, cored and cut into wedges
- 1½ cups fresh cilantro, basil, or flat-leaf parsley, torn if large
Directions:
- In a small saucepan over medium heat, combine the oil and peanuts. Cook while stirring until fragrant and golden brown, about 4 to 6 minutes. Use a slotted spoon to transfer the peanuts to a paper towel-lined plate.
- In the same saucepan, add the sesame seeds and cook until lightly golden, around 2 minutes. Remove from the heat and mix in the chipotle chili, adobo sauce, vinegar, and a pinch of salt and pepper. Let it cool to room temperature.
- In a serving bowl, toss the prepared tomatoes with half a teaspoon of salt, letting them sit for about 10 minutes. Chop the peanuts into smaller pieces.
- Pour the chipotle-sesame mixture over the tomatoes and add cilantro and peanuts. Stir gently, taste, and adjust seasoning with more salt and pepper if needed.
